Gnocchi & From Scratch Tomato Sauce
Serves: 3
Tomato Sauce Ingredients:
1kg vine ripened tomatoes, scored around the middle
1/3 cup olive oil
4 cloves garlic, peeled & crushed
1 1/2-2 tsp salt OR to taste
Large handful basil leaves, torn
Fresh ground black pepper
1/4 cup roughly chopped flat leaf parsley to serve
Gnocchi Ingredients
500g any variety of potato
100g plain flour
1 small egg
1/2 tsp salt
50g finely grated parmesan cheese
Tomato Sauce Method:
Place tomatoes in a large bowl and cover with boiling hot water. Weigh them down with a plate so they are well submerged.
Wait for about 10 mins then drain and peel the skins off. Discard skins. Chop the tomatoes roughly and set aside.
Combine the oil and garlic in a medium heavy based saucepan over medium heat.
Once the garlic starts to sizzle and become fragrant, add the tomatoes with 1 tsp of the salt.
Bring to the boil then reduce to a simmer. Stir from time to time.
Cook until thick and the oil comes to the surface. Turn the heat off and stir in the basil leaves.
Gnocchi Method:
Place the prepared potatoes in a steamer basket and cook until tender. Immediately pass through a potato ricer, mould or a sieve. Add remaining ingredients and squeeze to combine.
Flour your work surface and roll the dough into 1cm cylinders. Line up 2-3 cylinders side by side then using a knife or pastry scraper cut into 2cm pillows. Toss in more flour and rest in a single layer in a baking tray.
To cook the gnocchi, carefully scoop them and boil them in plenty of salted water until they float.
Scoop them with a slotted spoon and transfer them directly into the sauce.
Spoon some sauce to coat then transfer them onto a plate or bowl to serve.
Garnish with roughly chopped flat leaf parsley and a good amount of finely grated Parmesan cheese.
