Pineapple Fried Rice

Serves: 3-4 as a shared plate 

Ingredients: 

  • 3 Tbs olive oil 
  • 3-4 sprigs curry leaves 
  • 1/2 cup diced bacon or smoked ham 
  • 3/4 cup sliced spring onions
  • 1 medium red capsicum, diced 1cm cubes
  • 1 cup pineapple, cut into small bite sized chunks 
  • 1 1/2 cups cooked, chilled rice OR unheated microwave rice 
  • Fish sauce OR light soy sauce to taste 
  • 2 large eggs, whisked with 1 tsp light soy sauce 
  • 1/2 - 3/4 cup finely chopped coriander 

Method:

  • Combine the oil, curry leaves and bacon in a large heavy based non-stick frypan over high heat. Stir fry until the leaves and the bacon start to pop. 
  • Add the spring onion, capsicum and pineapple. Stir fry for a few seconds. 
  • Make a well in the middle. Add a dash more oil then pour in the egg. Allow it to cook for a while before flipping it over. 
  • Chop into it with spatula and stir fry until cooked through. Add the rice and fish sauce. Stir fry until rice is tender. Turn the heat off and stir through the coriander.

Sweet, Sour & Spicy Prawns

Serves: 3-4 as a shared plate

Ingredients: 

  • 3 Tbs olive oil
  • 3 cloves garlic, peeled & crushed 
  • 450g peeled raw prawns, deveined and butterflied 
  • 1 red onion, peeled, halved & sliced 5mm
  • 1 yellow capsicum, quartered, sliced 5mm strips 
  • 1/3 cup ketchup OR tamarind paste (I lost my mind with the stunning views and used both but it’s not necessary)
  • 2 Tbs sriracha chilli sauce 
  • 2 Tbs sugar or to taste
  • 1-2 Tbs fish sauce OR to taste 
  • Coriander for garnish 

Method:

  • Combine the oil and garlic in a large heavy based non-stick frypan over high heat. Sauté the garlic until pale golden and fragrant. 
  • Add the prawns and stir fry until almost cooked through. 
  • Add the remaining ingredients except the coriander and stir fry until the sauces coat everything. 
  • Garnish with the coriander and serve immediately with the pineapple fried rice. 
  • Enjoy!
